What I Ate Sunday
After a marathon of eating over the weekend, I wanted to get back into a healthier routine on Sunday. So for a little What I Ate Wednesday recap, here’s what I ate on Sunday!
I woke up and had some coffee followed by a bowl of yogurt, berries, and this grain free granola. I ate this while starting the first day of the She Reads Truth advent study! (They also have a guy’s version, so I got Alex one, too!)
Afterwards I read the paper for a little while, then headed off to gymnastics. I ended up staying at the gym for almost two hours, so I thought I would be starving by the time I got home but I still wasn’t super hungry. I settled for a kale salad with garlic tahini dressing.
By the time I ate lunch and showered, it was time to head to church. It was a great service (I love Advent!) and then we went over to my brother’s house to catch up with my family before my parents headed back to Ohio.
There were tons of delicious leftovers but I stuck to the leftover brown rice and butternut squash dish. I liked it better with the wild rice last year but I couldn’t find any this year! I did have a few handfuls of Skinny Pop after dinner but I’m trying to slow down my snacking. Overall, it was a delicious day!
Eating clean has proved to be a bit more challenging during the work week. Catered lunches, happy hours, and team dinners make it pretty tough. but the holidays are a good time to practice balance. You don’t want to miss out on all the Christmas cookies but you also don’t want to feel like a stuffed turkey. Have a little bit of the things you love and skip out on the things you’re not so crazy about. That’s my goal this month!
Did you eat a lot of Thanksgiving leftovers?
I really like your goal. I think that’s my plan too for Deccember. I mean I am not going to not eat all the Christmas sweets at all – that would just be torture – but there is no need to eat ten cookies every day. Everything in moderation is what I am going to try and do 🙂
That leftover brown rice with butternut squash looks super yummy. Skinny pop is my favorite snack to munch on! I agree with your balance and moderation for the holidays. I’m not depriving myself of any delicious holiday cookies if I want them!
I’ve been following you for a while now and have to ask… is this really all you eat? It doesn’t look like much :/ I’m a lot shorter than you and even I couldn’t survive off this.
I actually have been drinking our leftover cranberry sauce after I get done training. It sounds weird but it is a sweet/tart combination that hits the spot! We also have an abundance of dinner rolls which are easy to pop into my mouth as I head out the door. I made stuffing sandwiches the next day with my extra stuffing and that was DELICIOUS! Stuffing+cranberry sauce+squash=AMAZING!
I kind of want to make thanksgiving meals once a month so then I have leftovers haha
We don’t celebrate Thanksgiving over here but happened to have a family gathering for my grandma’s birthday this past weekend. Which included a seasonal German tradition: Grünkohl. It’s kale prepared a certain way, usually very heavy and meaty but my grandma made sure to have a vegetarian version at hand, too. I may or may not have suffered a serious sodium-induced headache … That’s what you get for enjoying it a bit too much.
Your goal for the season of indulgences is great. It’s really all about balance. Neither stuffing ourselves silly nor shunning any treats.
I was all about the leftovers this weekend. I really actually like turkey a lot, and we had a lot of roasted veggies, so I was a happy camper! Also pumpkin desserts 🙂
You are making me feel grateful that I work in an office with just one other person so there are never any potlucks or temptations. This means, too, that once I go back to visit my family over the Christmas, I need to allow myself to indulge without guilt!

Normally I am all about some Thanksgiving leftovers, but since I was out of town this year there are none for me : ( Guess I need to go to Cracker Barrel or something now!
I don’t want to look at turkey for at least two months after last week! We tossed the rest of our leftovers yesterday.
I feel like this time of year I see nothing but cookies and treats and it must be reverse psychology because everyone telling me to eat cookies makes me just want salads more haha.
Girl, I am with you! So much Turkey, but I cannot get myself to waste the food. I’ve been trying to repurpose it any way I can!
I like your goal. Now things do start getting a little more difficult to feel controlled – busier schedules and more indulgences. But you are right – take what you like and simply don’t have what you don’t. Its nice how after even a weekend of more indulging our bodies know when we just need some kale and rice 🙂
