What I Ate: Comfort Food
Sunday morning was spent with coffee and the paper, which is exactly how I like to start the week. I wasn’t in the mood for my typical yogurt bowl or smoothie so I decided to have toast. I hadn’t gone grocery shopping yet and there wasn’t a whole lot to choose from. But this hit the spot!
No peanut butter. Just some plain old Kerrygold butter.
But we didn’t relax for long. We’ve been tackling a lot of lingering house projects. We got our coat hooks up and our entryway bench painted! I also hit the grocery store, hoping to beat the Sunday afternoon crowds but it was still pretty busy even in the morning.
I was craving some comfort food so I did a little experimenting in the kitchen. When I was a kid, tuna, noodle, & mushroom soup casserole was my favorite. That probably sounds gross but I’m telling you, it was the best. I don’t eat tuna anymore but I wanted to recreate the creamy egg noodle dish in a healthier way. I know this looks gross. If I do share the recipe, I’ll have to take some prettier photos!
It came out pretty well but I have some more tweaking to do before it’s totally ready to share. (Also, I was clearly too focused on shoveling it into my mouth so I didn’t actually take a photo until I packed up the leftovers. Oops.)
After lunch I went back to the craft store to pick up more frames. We scored some awesome prints at a garage sale last year but we hadn’t gotten around to actually framing them. Once we got them in the frames, Alex hung them all up. I LOVE how these turned out! Each of the prints is a different spot in Richmond.
We headed off to church and hung around for awhile afterwards chatting with friends and catching up with people. By the time we got home, we were both really hungry so I put dinner together pretty quickly. I used some of the leftover black bean soup from Saturday to make a filling for some black bean quesadillas.
I love repurposing leftovers! It’s an easy way to make dinner without getting sick of one thing.
Dessert was one little Reese’s cup. I managed to save two from all of our Halloween candy. I definitely did not buy enough candy for all the kids that came to our house! Lesson learned for next year. But also, I think I’ve spoiled myself with fancy dark chocolate and now the Hershey stuff just isn’t the same.
This might not have been the most veggie-filled day but all of these foods were exactly what I was craving! I didn’t feel the need to snack as much as I normally do so I think that’s a good sign of satisfaction!

Tuna noodle casserole was my ALL time favorite when I was a kid!! I would so still eat it if someone made it gluten free. I know the canned soup stuff isnt great for you – but I just love that pasta dish so much! And yes, theres too much leftover candy here!
No leftover candy here :(, but we do have a candy basket that we eat from during the year. 😀 Reese’s cups are da best!
No leftover candy here since we were in Chicago for Halloween! We hopped into CVS the other day, and as we passed by the sale candy, Vishnu picked up a huge bag. I told him to put it down! I think the good stuff has spoiled me too!
We weren’t home during trick-or-treating, so I never even bought candy. I do love some Reese’s cups, though, they’re probably one of the only candies I get excited about.
Not a lot of extra candy since we put the bowl out later in the evening and some of the teenagers usually grab the rest! That casserole looks yummy, can’t wait for the recipe! I still like tuna casserole (but now with quinoa noodles for me!)
No candy here but I agree with you on the gourmet dark chocolate thing – I have been buying Theo or Black and Dark 85% and now the hershey’s dark chocolate tastes like milk chocolate!
We didn’t have left over candy, but we do have price reduced candy 🙂

We have a ton of leftover candy, as usual, but actually, not as much as usual because my son didn’t trick or treat to the fullest extent because he had a Halloween party instead. I am not complaining! There’s only so much candy we can handle before it just sits all year lol
Tuna noodle casserole is a dish I’ve only heard about but never eaten as a) it’s not a classic over here and b) I never liked tuna, haha. But vegetarian versions of many dishes I wouldn’t have eaten the ‘real’ deal of intrigue me so I’m curious to see yours! And: some of the most delicious dishes don’t look good in pictures.
We didn’t have any leftover candy as we actually didn’t buy any or have trick-or-treaters. Just like Tuna Noodle Casserole Halloween isn’t well known/celebrated here :).
