It’s Friday. And a summer Friday at that. So how about we keep things nice and easy with a breakfast recipe that will take you less than 5 minutes to make. Ok? Easy. Plus, once you make this, you’ll probably want to make it over and over again until peaches go out of season. Seriously.
Can we please talk about how peaches and almond butter are one of the most amazing combinations ever? I’m kicking myself for not trying this sooner! If you’re wondering about some other unexpected almond butter combinations, try it with sweet potato! Trust me, the almond butter and sweet potato combination is a great one. But let’s get back to these peaches!
This is one of those kind-of-silly-to-write-a-recipe posts but honestly, these are my favorite kind of recipes! You don’t need to really measure anything. You don’t need to fill up your grocery cart with ingredients you’ll only use once. You just have to throw a few things together and- voila. Breakfast is served.

How to Pick a Perfect Peach
Be sure your peaches are ripe so they’re nice and sweet for this toast! When picking a peach, look for a peach that doesn’t have any blemishes, bruises, or soft spots. As it begins to ripen, it will give slightly when gently squeezed. Be sure the peach isn’t too soft or overly ripe, otherwise, it will be soggy.
My Favorite Almond Butters
I love the salted crunchy almond butter from Trader Joe’s, and that’s one of the most inexpensive options I’ve seen! I also really like Justin’s Cinnamon Almond Butter. It’s such a nice hint of flavor for this toast recipe, but it’s also great in oatmeal or on sandwiches!
How to Make Toast Without a Toaster
Just in case you don’t have a toaster, I thought I’d share how to make toast without one!
Stovetop Method
Heat a non-stick skillet over medium heat. Spread a thin layer of butter on each side of the toast. (You can skip the butter if you like, but it helps prevent the bread from becoming too dry.) Cook over medium heat, then flip the bread once the first side is golden brown. Continue to cook until your desired level of toast!
Oven Method
You can also toast your bread in the oven and this can be a great option if you want to make multiple pieces at once. Lay the bread flat on a baking sheet. (Again, you can add a thin layer of butter if you like.) Preheat the oven to broil. Once the oven is preheated, bake the bread for 1-2 minutes per side, until browned. Keep a close eye on it as oven times may vary.

Ingredients
- 4 slices of whole wheat bread
- 4 tablespoons almond butter
- 1 large, ripe peach
- 8 large, fresh basil leaves
- Pinch of sea salt
Instructions
- Toast the four slices of bread.
- Divide the almond butter up evenly between slices.
- Slice your peach into thin slices.
- Top the bread with the peaches.
- Slice your basil into ribbons and sprinkle on top.
- Sprinkle sea salt on top and serve.
The first time I made this, it was actually for lunch. In my opinion, breakfast foods should really be enjoyed as often as possible. Before Alex and I got married, smoothie bowls were a routine dinner. I basically didn’t cook anything unless it was specifically for the blog. And even then… sometimes it was lazy recipes like this. What can I say? I like easy meals. Don’t you?
Besides, when easy meals are that gorgeous, do you need any more excuses to make this? No. So whip this up for your next Sunday morning brunch or Monday morning breakfast!
