Tuesday’s Eats
There’s something kind of odd about cataloging your eats for the day. If you’ve ever kept a food journal, you know that just being aware of what you eat, often causes you to make better choices. It’s strange, but it tends to work. It’s probably also a little strange that I find it fascinating to see what others are eating. It gives me inspiration and recipe ideas, and often, it motivates me to try something new.
I’ve been doing these posts for awhile now and hopefully today’s post, strange though it may be for some of you, will encourage and inspire you to eat more fruits and veggies! Here’s a little “What I Ate Tuesday“.
Breakfast
I rolled out of bed at 5:30am to go to spin class (read all about that here) and although I wasn’t hungry, I managed to eat half an apple to give me a little fuel during the class. Once I got home, I had the other half of the apple, plus a couple of slices of toast and a mug of coffee. If you haven’t tried Food For Life Bread before, check it out. It’s delicious and super good for you. Peanut butter just wasn’t sounding great (who am I?) so I just spread a little butter on top.
Lunch
I was able to get lunch with my brother, which was so fun. I love that we work at the same company, so we can squeeze in lunch dates every now and then. I had a sandwich from Which-Wich, which was a lettuce wrap filled with hummus, feta, tomatoes, cucumbers, and red peppers. It was awesome. I love their lettuce wraps! Veggies inside a veggie? Win-win.
In the afternoon, I had half of a Thin Thin bar, and when I got home, I had another slice of toast. We weren’t eating until later and I was so hungry when I walked in the door, I knew I needed something to tide me over! Of course, I saved room for dinner…
Dinner
My roommates and I decided to have a little dinner date at Mellow Mushroom. We shared some spinach dip, and then Rachel and I split this Kosmic Karma pizza. We got a small and still took half home, because it was so filling! One piece was all I could handle, (probably due to that spinach dip…) but it was SO good! Feta + Pesto = delicious.
Despite eating both lunch and dinner at restaurants, I felt pretty good about the day. I definitely worked up an appetite and spin class, but I also didn’t totally stuff myself with pizza. Balance, that’s what we’re after here, right?
Thanks for the breakfast inspiration!!
your eats look awesome! I’ve been to that Mellow Mushroom in Richmond and it’s soooo good! Pizza is one of my favorite foods, so it’s really easy to please me, but still. Looks like a good choice with the feta and pesto!
It’s so good! (and if you sign up for their e-mails, you’ll get a free appetizer! That’s what I did!)
i am eating greek yogurt (vanilla) as I type this. I am anticipating some salad for lunch and dinner – not sure but now I am craving pizza 😛
I definitely need to restock my yogurt supply! I’m all out!
I rarely track what I eat or count calories, although I do think it’s good everynow and then to help you get back on track. I think I just dislike the whole mentality of watching what you eat (vs. eating whole, fresh foods and feeling good). Anyway. I def ate two cookies and pizza yesterday, so today is eggs, apple, coffee (breakfast), kale chips and tuna (lunch), apple and PB (snack) and then sushi for dinner as a date night with hubby. This will probably include edamame and a glass of wine. We shall see! 🙂
Yum!!! That sounds like a healthy (and totally delicious plan!) And I agree… it’s all about balance!
The lettuce wrap is a wonderful idea! Guess I could make that at home. The pizza has me mesmerized…Yum!!
Yep! all you need is a giant head of iceberg, or some romaine hearts!
Mmm that pizza looks awesome! I just finished a yogurt bowl with some warm cinnamon/maple apples and a dollop of peanut butter! Delicious 🙂
IS THERE A WHICH WHICH IN RICHMOND?!!?!?!?!?
You don’t understand my love for that place. It’s so good. Then you had Mellow Mushroom afterwords…you are living my dream right now.
YES!!!! There are two actually! (That I know of… maybe more?) Come for a visit and we can go to both 😉
I have been craving pesto like crazy lately! I usually have it mixed with goat cheese on a salad, but it sounds like it would be great as a pizza topping with feta! THat lettuce wrap looks great!
Mmm pesto with goat cheese sounds amazing!
Which-wich sounds awesome..love that lettuce wraps are an option! I just had lunch which was homemade oat flatbread with mixed Indian veggies & plain yogurt!
Ohhh man that sounds like a delicious lunch! (And YES! I love when fast-food-ish places offer lettuce wraps!)
Feta and Pesto on pizza – i’ll take a whole pie for myself =)
