Happy Monday, friends! This weekend fleeeeew by. Mostly because I was busy turning 23.

There isn’t really anything interesting that comes along with turning 23, but don’t worry, we found ways to celebrate.

Eric threw me a watermelon themed birthday party, which means I’ll never look at watermelon the same way again. For better or for worse.

Try not to be super jealous of my BFF. This is us eating a piece of cake together. And I realize we look like we’re a married couple getting read to eat wedding cake or something. Sorry.

 

 

But how cute is this cake?! On top of that watermelon is 23 cake balls. Have you ever made these things?! They’re delicious.

Just in case you do want to make these, it’s super simple:

Easy Cake Ball Recipe

  • 1 cake, baked and slightly cooled
  • 1 can of frosting
  • 2 cups chocolate candy coating

You just crumble up the baked cake, and mix in a can of frosting. You can do any combination, like chocolate and chocolate. Or red velvet and cream cheese. Any combo you dream up. Then roll it into balls and let it freeze for at LEAST an hour. Spear with a toothpick and dip the balls in some melted candy coating and let it set. Obviously, the possibilities for this are endless. And you can add things like nuts and sprinkles to the candy coating. Go make these, and your neighbors/coworkers/friends/family/crazy ex-boyfriends will love you forever.

 

Also, in case you were wondering, you can make vegan jello shots.

Pick up some vegan “jel dessert” and follow the package directions, substituting about 40% of the water for vodka. (But you didn’t hear that from me.)
