Pumpkin Pie Oats!
I love breakfast foods for dinner. Sometimes that means something simple like yogurt+berries, sometimes it’s more complex, like cornbread waffles, and sometimes, it’s just a bowl of oats.
I find that I like more mild oats in the morning. If I get too fancy, with cocoa powder or spices, it doesn’t sit well in my tummy. So in the morning, I usually just stick to oats with a banana, and maybe some peanut butter on top. But for dinner… I like to get a little more creative.
Pumpkin Pie Oats
- 1/3 cup oats
- 2/3 cup almond milk
- 1/3 cup canned pumpkin
- 1 egg white
- 1/4 tsp pumpkin pie spice
- 1-2 packets of stevia
- graham cracker crumbs
I cooked up my oats in almond milk, and stirred in the egg white, so it could get cooked through. The egg white adds some nice volume and protein, but if you wanted to make this vegan, you could leave it out. Then stir in your pumpkin and spices. Transfer it into a bowl and top with graham cracker crumbs. It’s as simple as that! You’ll feel like you’re digging into some decadent pumpkin pie, but it’s much healthier 🙂

I was super excited to try it (Um, yes, I get excited about things like wheat bran. Don’t judge.) but I don’t know what to use it in! Does anyone have any suggestions for using wheat bran? Feel free to link recipes!
One last thing, I had so much fun running the 10K, I think I’m going to sign up for another one in May! So the running shall continue, which means I’ll be needed to refresh my tunes soon! Stay tuned… (I couldn’t resist the pun. Sorry.)

I could eat breakfast foods for all three meals!!! Oatmeal with pb. for breakfast, toast with pb. and jelly and a banana for lunch, and a huge pile of pancakes for dinner!!! YUMMY!!!

As for oat bran, I LOVE that stuff. My favorite way to eat it is to cook it in almond milk with some cinnamon and then top it with banana slices and some kind of nut butter! Pretty much how I like my oatmeal!

I love pumpkin pie oats! I could eat oats at anytime but I get so little protein I stick to breakfast 😉 Definitely sweet oats for me.
I could totally eat breakfast three times a day! There are just so many good choices! I’m not a big oats person, mostly b/c mine never look as good as the ones on blogs haha!
Hahaha oats aren’t usually the most photogenic food. Especially when I put cocoa in them… mine tend to look kind of like mud, haha
Lately, I’ve been having oats for dinner often. I love sweet oats and experimenting with flavors is so much fun!

Eating breakfast food for dinner is quite possibly one of my favorite things ever.
Pancakes are my life.
So are waffles.

I put wheat bran in soup and in bowls of cereal. Or smoothies. Parfaits. Really, anywhere that I can add it without noticing it much, I do.
