Greek Chickpea Salad
It was one of those weekends that just seems to fly by in the blink of an eye, probably because my parents were visiting, and we were trying to cram in lots of time together! It was great to see them, as always, and I wish the weekend could have stuck around a little longer.
Obviously family time included a glance at some old pictures… here’s me back in 1990:

So in between running between my house and my brother’s house, I whipped up a quick lunch for Alex and I after gymnastics. I didn’t have much on hand (and was disappointed to see that the leftover Bombolini pasta had gone bad in the fridge) so I scrambled through the cabinets to see what else I had that I could throw together. I just happened to have a little bit of enough stuff to throw together a pretty great salad. So if you ever find yourself in one of those scrambling-t0-make-something-quick-and-healthy afternoons, try this!
Greek Chickpea Salad
- 1 can chickpeas
- 2 oz feta cheese, crumbled
- 1 Roma tomato
- 1/4 cup diced red onion
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp salt
- 1/2 tsp dried parsley
- Juice from 1/2 lemon
Rinse and drain the chickpeas, dice your tomato, and then toss it all together. This is a great salad that you can make ahead of time, because the flavors get even better when it marinates for a bit. We had ours with some pita and hummus. It was delicious, and still pretty healthy! Chickpeas are one of my favorite vegetarian sources of protein because they’re so versatile, and they pack in fiber as well.
I can’t seem to get enough feta these days. I’ve been keeping a block in the fridge and it goes with everything!

Aw, you were so cute in your little overalls! I end up looking through old pictures every couple of years because that’s how often we move. They always bring back good memories though.

I love when throwing random ingredients turn out rather fantastic- I am such a fan of Greek flavors and I know I’d love this. I bet adding in some quinoa or brown rice would turn it into a full meal!
It always seems like a small miracle when you’re able to work with what you have “in stock” at home!
I totally love looking through old photos and using them on the blog when able. It’s so funny to see my parents when they were in their 30’s. I think of them as being so old then (having kids and all) and me as being so young now : )

You were/are such a cutie! And check out those gymnastics moves…damn girl! I do enjoy looking through old pictures but I’m the fourth kid so my parents got a little tired of picture taking by the time I was born so I’m not in many pictures 🙁
It’s funny that no matter how insanely ridiculous my childhood outfits were, I still think they’re adorable. Just can’t admit to myself that anything about the 90s translates into not an awesome look for me. This salad sounds great! I love chickpeas and am equally obsessed with feta. Have to love a meal that comes together in a flash.
Old pictures bring back such good memories. I love looking at ones when I was young but I also love looking at photos of my parents back in the day too. I’m glad you had a great weekend! I hope to see you soon! 🙂
Some of the old pictures of me I am wearing the most hideous outfits. Especially when it was the 80s and my parents let me start picking some of my own clothes, I remember fluro over-sized overalls – not pretty!
I am still so impressed but you and your gymnastics, that flip I saw on Instagram, AMAZING!! I did gymnastics as a kid but was very uncoordinated at it.
