Cabbage and Noodles
Buttery, caramelized cabbage and onions, tossed with tender egg noodles, make the ultimate budget-friendly comfort food. A classic recipe known as haluski, this dish is quick, cozy, and deeply satisfying!

Why I Love This Recipe
This dish is the definition of humble ingredients turning into something magical. Thinly sliced cabbage and onions melt down until golden and caramelized, then get tossed with soft egg noodles and plenty of butter. Itโs inexpensive, nostalgic, and comforting in a way that hits the soulโnot just the stomach.
Haluski is traditionally Eastern European, but it fits right in with the cozy, carb-forward meals we all crave when the weather cools down (or when life feels chaotic and you just want dinner to be easy). No fancy techniques. No long ingredient lists. Just simple, savory goodness.

Ingredients & Substitutions
Cabbage: A small head of green cabbage is perfect. Savoy works too, but green cabbage gives the best texture.
Onions: Yellow onions caramelize beautifully and add sweetness.
Butter: Four tablespoons total. You can swap half for olive oil if you prefer.
Garlic: Fresh garlic adds depth and warmth.
Wide Egg Noodles: Classic for haluski! If you want a vegetarian option without eggs, swap in any wide, ribbon-style noodle.
Salt & Pepper: Start with the recipe amount, then season to taste at the end.
Fresh Dill: Optional, but adds a bright, fresh finish.
How to Make Cabbage and Noodles

Tips for Perfect Cabbage & Noodles
- Let it caramelize. The browning is where all the flavor comes from, so donโt rush it.
- Salt at the end. Cabbage cooks down significantly, so hold final seasoning until everything is combined.
- Add-ins welcome. A sprinkle of fresh herbs like dill or parsley add a little color and flavor, but it’s totally optional.
How to Store and Reheat
Store leftovers in an airtight container for up to 3 days. Reheat in a skillet with a splash of water or broth to loosen it up. If I plan on having leftovers, I typically save a little bit of pasta water to sprinkle on top of the noodles before reheating. It helps prevent them from drying out.
