Okay, I’m a little proud of this one. I built Week 4 so you actually use up everything you buy — no sad half-bunch of cilantro going slimy in the back of the fridge. One block of feta carries the Baked Greek Pasta, the Tomato Feta Soup, and the Avocado and Feta Dip, and the cilantro, limes, and ginger all pull double duty. The best part is, the meals still have a lot of variety! Cozy tomato feta soup, a creamy sweet potato and chickpea curry, veggie lo mein, crispy pinto bean tacos, plus breakfast, two snacks, and my cannoli dip.
