The Labor-Less Weekend
This weekend has been exactly what I hoped. Lazy. Relaxing. Unproductive.
I normally can’t stand to sit still. I need to be constantly doing something. So it was nice to just sit back and relax with friends.
A few nights of going out, house parties, you know, the usual.
I’ve been eating ugly but delicious meals, like this:
I was in the mood for a Mexican Mess but didn’t have all the standard ingredients, so I whipped this up instead. It’s not even really a recipe, but in case you’re curious, it was:
- 1/2 zucchini
- 1/2 yellow squash
- 1/2 cup salsa (I used a really spicy kind)
- 1 can diced tomatoes
- 1/2 onion
- spices to taste (chili powder, crushed red pepper, garlic and salt)
I just sautéed it all in some olive oil until the veggies were nice and soft. I love dishes like this because you can basically substitute anything you want and it’ll still come out delicious.
I’ve also been eating almond butter like it’s my job.
(If a job like that exists, please consider this my application.) Thanks to the almond butter + sweet potato combo that I can’t stop eating, I’ve gone through so much almond butter, that this jar was just asking to be made into a smoothie bowl. Who was I to deny the almond butter?
This was your standard: almond milk + banana + stevia + xanthan gum + ice combination, poured into a little almond butter jar for maximum deliciousness.
Other random weekend highlight: trading in my semi-broken Droid for an iphone
After the amazing transition from PC to Mac, I was really excited to finally switch to an iphone. I’m kind of obsessed. I think my favorite part is Instagram. (I know, I know, of all the awesome features, am I really saying this is my favorite part?) Let me have my fun, alright?

A lazy weekend sounds amazing. I normally can’t sit still, but I’ve been so on the go lately!
I definitely cannot sit still. Pretty sure you already know this about me. It just is not in my body chemistry. I have to constantly be moving and busy.

lazy weekends are the BEST! and I spy an almond butter jar from a very special almond butter ;). that smoothie sounds like a great way to polish it off!!
Ugly food is always delicious! Throwing random veggies together is always great with the right spices and chili powder always makes things great.
The best thing I did this weekend was play Dance Central for *hours*. It was so much fun!
If there was a job for eating peanut butter I would so win at that. I love almond butter too but seriously peanut butter is my first love
I am the same way but found a good balance between being busy and completely relaxing. I am actually ready to go back to work which is so shocking! I love instagram and am so jealous of iphone users!
I’m in LOVE with almond butter! I just opened a new jar and it’s heaven. I like it more than the first time I tried it which wasn’t too long ago.
I’m waiting for the iPhone 5 to come out so I can get the iPhone 4 at a cheaper price. I’m so jealous you got one, I can’t wait any longer!! 😀
best thing I did was go to Disneyland 😉 although I worked most of the time, it was a nice break.
Gotta love long weekends! Leaves extra time for relaxing amidst the normal weekend shannigans 😛 Best part of this weekend was most definitely seeing all my JMU girls!!!
1st, I LOVE sweet potatoes and pb(or almond butter!!) I had one for lunch today=happiness! The best thing I did this weekend is go to church. I’m ready to face the next 4 days now! Starting my week praising Jesus is the best. The most fun thing I did is keeping my little 2yr old niece Addison Grace. The best thing I ate was that sweet potato. 🙂
