Monday morning, Richmond got a whole bunch of snow. While I know the whole country is ready for spring, I’m kind of enjoying the snow. Obviously I’m so ready for warmer nights, walks around the city, and sunshine in the park, but you might as well enjoy what you’ve got, right? Plus, the snow looks kind of pretty and peaceful.
Anyways, since I wasn’t able to go anywhere on Monday, I was able to get some decent shots of my meals, so I thought I’d show you a day of eats, without any iphone pictures involved. So here is my What I Ate Wednesday recap:
I was low on food, so I took what I had and made a smoothie. Everything above was tossed in a blender with ice and I literally ate this under a heated blanket because cold food in cold weather is kind of ridiculous. I really like Designer Whey protein. (You can find it on Amazon here.) This powered me through a little Power Yoga with my roommate. I’m still a little sore…
I wasn’t really sure what I wanted for lunch, and I didn’t have much on hand so this probably looks a little random. I ended up roasting half of a sweet potato and eating it with some massaged kale. I’m obsessed with the Garlic Tahini dressing from Whole Foods, so that’s what was on the kale. Pretty simple, very delicious. Literally massaging the kale with salad dressing and letting it sit in the fridge for awhile is the best way to soften the kale. #KaleTips.
Lunch kept me pretty satisfied for awhile, but I had quite a few vegetables that were on the brink of going bad so I decided to juice them. This made for a perfect energizing boost during the typical mid afternoon slump.
And then right after that healthy glass of juice, I also gave into a little carb-temptation. Mmm beer bread. I only had a small slice, because I knew I had a delicious dinner coming up.
Alex and I almost always go to Stuzzi on Monday nights for pizza. It’s definitely one of my favorites in Richmond. It’s Neapolitan wood fired pizza, so the crust gets a little charred and smoky. SO good.
We finished up the evening with a little per-marital counseling with our pastor followed by an episode of Mad Men. Not a bad way to end the day!
