I haven’t done a What I Ate Wednesday style post for a bit and I thought it would be fun to show you what I’ve been enjoying lately. I hope that these posts give you some inspiration for vegetarian meal ideas!

Breakfast

I’ve been doing simple yogurt bowls in the morning. I usually buy plain Greek yogurt (usually 2% because it’s thicker!) then add a splash of vanilla and a tiny bit of stevia for sweetness. Yogurt is one of those foods that can sneak in 20g of sugar if you’re not careful! Then I add some frozen berries and a handful of granola. If you let the berries thaw for a minute or two, it’s perfect! The yogurt gets super thick and chilled, almost like frozen yogurt!

 

Lunch

I had a late breakfast so I wasn’t super hungry for lunch. I picked up a cup of roasted red pepper and tomato soup with a few pieces of focaccia bread. It was simple but it really hit the spot! I didn’t really taste the red pepper so it tasted more like regular tomato soup which is one of my favorites!

I did a quick workout in the afternoon and it wasn’t too crazy but I definitely worked up an appetite!

Lately, I’ve been using the Tone It Up app and I love that it gives me a different workout to do every day! It usually only takes 20-30 minutes so it’s easy to squeeze in before dinner if I can’t make time for it in the morning.

Dinner

I was super hungry around 5:00 so I had a quick salad before I started making dinner. I knew we’d be eating a little later and I was so hungry, I just couldn’t wait! I’ve also been trying to waste less food, so it was a great way to use up some greens we had in the fridge!

Here’s the recipe for those whole wheat croutons pictured above! They’re so good.

We normally go to my parents’ house for dinner on Mondays but they were busy this week so we were on our own! I decided to try a recipe based off of something we made at a cooking class a few years ago. I remembered we made a dish with diced tomatoes and white beans. It was really simple but the flavors were great together.

This was a similar dish with tomatoes, white beans, and couscous. I’ll definitely be sharing this recipe soon once it’s perfected because it’s a great 15-minute dinner!

Simple Mills cookies

After dinner, I had a few of these chocolate chip cookies from Simple Mills. These crunchy cookies are SO good. The chocolate chip is probably my favorite so far but the toasted pecan ones were a perfect fall treat! I have a feeling this box is going to disappear pretty quickly.

I nibbled on these cookies while I got some studying done. I’ve been working on my personal training certification through NASM and I’m planning to take the exam soon! It’s been a lot of work, but I’m so close! I can see the light at the end of the tunnel! This week I’m trying to take as much time as I can to study and take the practice tests. Wish me luck!
