High Protein Chocolate Pudding
This high protein chocolate pudding is easy to make and completely plant-based. It’s perfect when you’re craving a sweet treat!
I wanted to create a high-protein dessert that I could feel good about eating and after many attempts, I’m excited to share that this one really came out perfectly! I tried a few variations, some with protein powder and some with cottage cheese, but this tofu-based version turned out to be the winner! The silken tofu creates a rich and creamy pudding texture, while the cocoa powder and maple syrup add plenty of chocolatey flavor and sweetness.
Ingredients & Substitutions
- Silken Tofu- This is the base of the pudding. Be sure to use silken tofu, which has a pudding-like texture. Firm tofu will not work in this recipe.
- Cocoa powder- Unsweetened cocoa powder creates a chocolatey flavor. If you have a chocolate protein powder you really like, you could try to swap out a little bit of the cocoa and sweetener for protein powder, but make sure it’s a protein you love! - Sweetener- You can use maple syrup (for a vegan option) or honey. Feel free to substitute with artificial sweetener or monkfruit sweetener, if that’s what you like.
- Salt– Add a pinch of salt to enhance the flavor.
Firm vs. Silken Tofu
Firm tofu and silken tofu are distinct varieties with differences in texture. Firm tofu has a dense and solid texture, maintaining its shape well in cooking. It contains less water, so it’s great for things like stir fries. On the other hand, silken tofu has a soft, custard-like texture, ideal for blending into smoothies, purรฉeing into sauces, or using in desserts like this one. Feel free to get creative with this pudding! It can be used as a base and you can mix in fresh fruit, chocolate chips, peanut butter, Oreo cookies, or nuts! I liked this pudding with fresh raspberries or a dollop of whipped cream on top. You can use vegan whipped cream if you want to keep this treat dairy-free.
