Foods I’ve Missed…
Now that I’m incorporating dairy back into my diet, I have to admit, there were a few foods I missed! Cheese & Yogurt. While I was able to find a decent substitute for yogurt, soy cheese just didn’t cut it. So on my first day back with dairy, my friend and I went to Stuzzi, a local pizza place here in Richmond. Check out this amazing pizza, with homemade mozzarella!
My friend is also a vegetarian, so he and I split a delicious veggie pizza. It was topped with artichokes, spinach, mushrooms, and eggplant. SO good! What do you like on your pizza?
Over the weekend, I went to Bakers Crust and enjoyed a Panini. I forgot how much I love paninis!
To recreate this amazing panini at home, follow this recipe:
Spinach & Mozzarella Panini
- 2 slices sourdough bread
- 1 tbsp pesto (I like this one)
- 1/2 cup spinach
- 1 slice mozzarella cheese
- 2 slices tomato
- olive oil
- basil (optional)
Lightly coat the bread with olive oil, and spread the inside with pesto. Add in the spinach, basil, cheese and tomato, and put toast either in a george foreman grill, a panini press, or even just a skillet.
Does anyone have any other panini recipes? I feel like the possibilities are endless! I can’t wait to make some variations of this. 🙂
