Description

This whipped feta is topped with roasted tomatoes for a deliciously simple appetizer. Serve it with a crusty baguette or your favorite pita chips for a tasty snack!


Ingredients

Units Scale

For the whipped feta:

  • 8oz block of feta cheese
  • 3/4 cup plain Greek yogurt (I used non-fat)
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes
  • Salt to taste

For the burst tomatoes

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes

Instructions

For the whipped feta:

  1. In a food processor, add the feta and Greek yogurt.
  2. Blend until combined.
  3. While the food processor is running, drizzle in the olive oil.
  4. Continue to blend until smooth.
  5. Transfer to a plate and top with red pepper flakes

For the tomatoes:

  1. In a non-stick skillet, add the olive oil, garlic, and tomatoes and heat over medium heat.
  2. Cook for 10 minutes stirring occasionally, until the tomatoes begin to burst.
  3. Add the tomatoes on top of the whipped feta
