Carrot Cake Cookies

These carrot cake cookies are the perfect treat to bake for the holidays! These soft and chewy cookies are studded with shredded carrots and sweet coconut flakes then drizzled with cream cheese frosting!

You need Plugrá butter Granulated sugar Light brown sugar Egg Vanilla extract All-purpose flour Baking soda Salt Cinnamon Shredded coconut Shredded carrots

In a large bowl, mix the melted butter, granulated sugar, and brown sugar until combined.

Add the egg and stir until combined.

In a separate bowl, combine the flour, baking soda, salt, and cinnamon.

Add the dry ingredients to the wet ingredients. Add the shredded carrots and shredded coconut and mix until combined.
