- 3/4 cup mashed banana (about 2 medium)
- 5 tablespoons maple syrup
- 4 tablespoons vegetable oil
- 1/2 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup chopped fresh strawberries
Instructions
- Preheat the oven to 350 degrees.
- In a large bowl, combine the mashed banana, maple syrup, and avocado oil. Whisk until smooth.
- Whisk in the almond milk and vanilla extract.
- Stir in the flour, baking powder, and salt until just mixed. Be careful not to overmix the batter.
- Fold in the chopped strawberries.
- Fill the muffin tins to about ½ inch below the top.
- Bake for 25-30 minutes, or until a skewer inserted into the center comes out clean.
- Allow the muffins to cool for at least 10 minutes before removing them from the muffin pan.
