These vegan tahini chocolate chip cookies are crispy on the edges and soft in the middle. They’re made with just 8 simple ingredients for an easy, delicious treat!

- 1/3 cup tahini
- 1/3 cup avocado oil
- 1 1/4 cup granulated sugar
- 1/2 cup almond milk
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup dark chocolate chips or chunks (vegan)
Instructions
- Preheat oven to 375 degrees. Line baking sheets with parchment.
- In a large bowl, combine tahini, oil, sugar, and almond milk.
- Stir in the flour, salt, and baking soda until completely incorporated. The dough will be crumbly, but holds its shape when squeezed.
- Fold in the chocolate chips.
- Scoop 2 tablespoon amounts of dough and place on lined baking sheets with 2-3” between them.
- Bake for 10-12 minutes until just barely golden brown around the edges. Remove from oven and tap tray once to help cookies settle.
- Allow to cool for at least 10 minutes on the baking sheet before moving to a cooling rack.
