Description

This sun dried tomato gnocchi is rich and creamy, but surprisingly easy to make! You only need 20 minutes and a handful of pantry staples to make this delicious meal!


Ingredients

  • 1 tablespoon olive oil
  • 1 (16oz) package shelf stable gnocchi
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1/3 cup sun-dried tomatoes, chopped
  • 1/2 cup vegetable broth or water
  • 1/4 cup heavy cream
  • 1 cup baby spinach
  • 2 tablespoons Parmesan cheese

Instructions

  1. Heat the olive oil in a large skillet over medium heat for 30 seconds.
  2. Add the gnocchi and let cook without stirring for 5 minutes. The gnocchi should get lightly browned.
  3. Add the garlic, Italian seasoning, and sun-dried tomatoes and stir to combine. Continue to cook over medium heat for 2-3 minutes.
  4. Add the vegetable broth, heavy cream, and baby spinach and reduce heat to low.
  5. Cook for 2-3 minutes or until spinach is wilted and sauce has thickened.
  6. Top with Parmesan and enjoy!
