Description
This sun dried tomato gnocchi is rich and creamy, but surprisingly easy to make! You only need 20 minutes and a handful of pantry staples to make this delicious meal!

- 1 tablespoon olive oil
- 1 (16oz) package shelf stable gnocchi
- 4 cloves garlic minced
- 1 teaspoon Italian seasoning
- 1/3 cup sun-dried tomatoes, chopped
- 1/2 cup vegetable broth or water
- 1/4 cup heavy cream
- 1 cup baby spinach
- 2 tablespoons Parmesan cheese
Instructions
- Heat the olive oil in a large skillet over medium heat for 30 seconds.
- Add the gnocchi and let cook without stirring for 5 minutes. The gnocchi should get lightly browned.
- Add the garlic, Italian seasoning, and sun-dried tomatoes and stir to combine. Continue to cook over medium heat for 2-3 minutes.
- Add the vegetable broth, heavy cream, and baby spinach and reduce heat to low.
- Cook for 2-3 minutes or until spinach is wilted and sauce has thickened.
- Top with Parmesan and enjoy!
