Description

This Strawberry Goat Cheese Salad is a light and delicious recipe, perfect for warm summer days. The crunchy walnuts, creamy goat cheese, and toasted croutons make this tasty salad irresistible!


Ingredients

For the salad

  • 6” french baguette, sliced into 1” slices then cubed
  • 1 tablespoon olive oil
  • 6 cups spinach or mixed greens
  • 1/2 cup grapes, halved
  • 1 cup strawberries, halved
  • 1/2 cup crumbled goat cheese
  • 1/4 cup walnuts, chopped

For the dressing

  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon lemon juice
  • 1/8 teaspoon of salt
  • Pinch of pepper

Instructions

  1. Toss the cubed bread with 1 tablespoon olive oil.
  2. Add to a non-stick skillet and toast for 5 minutes over medium heat.
  3. Use a spatula to flip the bread cubes and continue to toast for 4-5 minutes until evenly browned.
  4. In a large bowl, add the spinach, grapes, strawberries, goat cheese, and walnuts.
  5. In a small bowl or jar, whisk together the remaining olive oil, red wine vinegar, lemon juice, salt, and pepper.
  6. Drizzle the dressing over the salad and toss, then add the cubed bread and toss until just combined.
