For the salad
- 6” french baguette, sliced into 1” slices then cubed
- 1 tablespoon olive oil
- 6 cups spinach or mixed greens
- 1/2 cup grapes, halved
- 1 cup strawberries, halved
- 1/2 cup crumbled goat cheese
- 1/4 cup walnuts, chopped
For the dressing
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon lemon juice
- 1/8 teaspoon of salt
- Pinch of pepper
Instructions
- Toss the cubed bread with 1 tablespoon olive oil.
- Add to a non-stick skillet and toast for 5 minutes over medium heat.
- Use a spatula to flip the bread cubes and continue to toast for 4-5 minutes until evenly browned.
- In a large bowl, add the spinach, grapes, strawberries, goat cheese, and walnuts.
- In a small bowl or jar, whisk together the remaining olive oil, red wine vinegar, lemon juice, salt, and pepper.
- Drizzle the dressing over the salad and toss, then add the cubed bread and toss until just combined.
