Description

This hearty slow cooker lentil soup is filled with vegetables and packed with plant-based protein. This cozy soup is healthy comfort food at its finest and it’s so simple to make!


Ingredients

Scale
  • 1 yellow onion, diced
  • 3 large carrots, chopped
  • 3 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1/2 teaspoon cumin
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 6 cups vegetable broth
  • 1 cup brown lentils, rinsed
  • 1 large russet potato, chopped into 1” pieces
  • 1 tablespoon lemon juice

Instructions

  1. Add all the ingredients except the lemon juice to a slow cooker and stir to combine.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours, until lentils and potatoes are soft.
  3. Add the lemon juice and season with salt and pepper to taste.
