This single-serving apple crisp can be made in just 5 minutes! It’s made with good-for-you ingredients and it’s perfect when you’re craving something sweet.

For the filling:
- 1 medium apple, chopped into small pieces
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1 teaspoon lemon juice
For the topping:
- 3 tablespoons rolled oats
- 1 tablespoon almond flour (or any flour of your choice)
- 1/2 tablespoon coconut oil (melted)
- 1/2 tablespoon maple syrup or honey
- Pinch of salt
Instructions
- In a microwave-safe bowl, combine the apple pieces, cinnamon, vanilla extract, and lemon juice. Stir to coat the apples evenly.
- Microwave the apple mixture for 1 1/2 to 2 minutes, or until the apples have softened slightly. Set aside.
- In a separate bowl, mix the rolled oats, almond flour, melted coconut oil, maple syrup (or honey), and a pinch of salt. Stir until everything is well combined.
- Spoon the crisp topping over the microwaved apple mixture.
- Return the bowl to the microwave and heat for an additional 1 to 1 1/2 minutes, or until the topping is a light golden brown.
- Allow the apple crisp to cool for a minute before enjoying it.
