Description

This single-serving apple crisp can be made in just 5 minutes! It’s made with good-for-you ingredients and it’s perfect when you’re craving something sweet.

For the filling:

  • 1 medium apple, chopped into small pieces
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 1 teaspoon lemon juice

For the topping:

  • 3 tablespoons rolled oats
  • 1 tablespoon almond flour (or any flour of your choice)
  • 1/2 tablespoon coconut oil (melted)
  • 1/2 tablespoon maple syrup or honey

  • Pinch of salt

Instructions

  1. In a microwave-safe bowl, combine the apple pieces, cinnamon, vanilla extract, and lemon juice. Stir to coat the apples evenly.
  2. Microwave the apple mixture for 1 1/2 to 2 minutes, or until the apples have softened slightly. Set aside.
  3. In a separate bowl, mix the rolled oats, almond flour, melted coconut oil, maple syrup (or honey), and a pinch of salt. Stir until everything is well combined.
  4. Spoon the crisp topping over the microwaved apple mixture.
  5. Return the bowl to the microwave and heat for an additional 1 to 1 1/2 minutes, or until the topping is a light golden brown.

  6. Allow the apple crisp to cool for a minute before enjoying it.
