Description

Crispy halloumi and roasted vegetables are a tasty combination for an easy sheet pan dinner recipe! This salty cheese gets deliciously crispy in the oven and a rainbow of vegetables makes this hearty meal perfectly healthy!


Ingredients

For the Halloumi and Vegetables

  • 1 8oz package halloumi cheese, sliced into 1/2″ slices
  • 1 large bell pepper, chopped into 1” pieces
  • 2 cups broccoli florets
  • 1/2 cup chopped red onion

For the sauce

  • 3 tablespoons olive oil
  • 1/2 cup cilantro leaves
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cumin
  • Pinch of salt

Instructions

For the halloumi and vegetables

  1. Preheat the oven to 400 degrees.
  2. Line two baking sheets with parchment paper.
  3. Place peppers and broccoli on one pan.
  4. Place halloumi and onion on a second pan.
  5. Bake for 12 minutes, then flip the vegetables and cheese and continue to bake for 5 minutes.
  6. Turn the oven to broil and cook for 2-3 minutes until the halloumi is golden brown.
  7. Remove from the oven and add sauce. (Recipe below)

For the sauce

  1. Blend the olive oil, cilantro, paprika, and cumin.
  2. Add salt to taste.
  3. Drizzle over halloumi and vegetables.
