Description

Roasted cauliflower is a healthy way to satisfy your taco craving! With plenty of spices and a crunchy taco slaw, these roasted cauliflower tacos are a delicious way to eat your veggies!


Ingredients

For the tacos:

  • 1 large head of cauliflower, chopped into 1” pieces
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 4 small corn or flour tortillas (I used the street taco size)

For the taco slaw:

  • 1/2 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 tablespoon lime juice
  • 1 tablespoon mayonnaise
  • Salt to taste

Instructions

  1. Preheat the oven to 450 degrees.
  2. Toss cauliflower with olive oil, garlic powder, cumin, paprika, and salt.
  3. Spread cauliflower evenly on the baking sheet.
  4. Roast for 20-25 minutes, flipping halfway through, until golden brown and slightly crispy.
  5. Divide into tortillas, top with taco slaw, and add any additional toppings you like.
