Ingredients

  • 3 1/2 cups rolled oats
  • 3/4 cups walnuts, coarsely chopped
  • 3/4 cups roasted pepitas (pumpkin seeds)
  • 1/2 cup maple syrup
  • 1/3 cup melted coconut oil
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice (see note)
  • 3/4 cups dried cranberries

Instructions

  1. Preheat oven to 300 degrees. Line a baking sheet with parchment or a silicon baking mat.
  2. In a large bowl, combine the rolled oats, chopped walnuts, and pepitas. Stir to distribute.
  3. In a small bowl, combine the maple syrup, melted coconut oil, salt, and spices.
  4. Pour the maple mixture over the dry ingredients. Stir until everything is well coated.
  5. Spread out the mixture on the prepared baking sheet into an even layer.
  6. Bake for 30-40 minutes without stirring until golden brown.
  7. Remove from oven and allow to cool completely without disrupting the mixture. The less the mixture moves while baking and cooling, the more clusters will form.

  8. Sprinkle the cranberries over the mixture and break the granola into pieces.
