- 1/2 cup rolled oats (uncooked)
- 1/3 cup unsweetened almond milk
- 1 tablespoon chia seeds
- 3 tablespoons pumpkin puree
- 2 teaspoons maple syrup
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon pumpkin pie spice
- Pinch of salt
- Pumpkin seeds or granola for topping (optional)
Instructions
- Add the oats, milk, chia seeds, pumpkin, vanilla, pumpkin pie spice and salt to a jar.
- Stir until combined.
- Place in the fridge for 2-3 hours or overnight.
- Top with pumpkin seeds or granola and enjoy.
