Description

These creamy pumpkin overnight oats are a filling and delicious breakfast, and they’re so easy to make! This recipe is filled with healthy ingredients, but it tastes like dessert.


Ingredients

  • 1/2 cup rolled oats (uncooked)
  • 1/3 cup unsweetened almond milk
  • 1 tablespoon chia seeds
  • 3 tablespoons pumpkin puree
  • 2 teaspoons maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of salt
  • Pumpkin seeds or granola for topping (optional)

Instructions

  1. Add the oats, milk, chia seeds, pumpkin, vanilla, pumpkin pie spice and salt to a jar.
  2. Stir until combined.
  3. Place in the fridge for 2-3 hours or overnight.
  4. Top with pumpkin seeds or granola and enjoy.
