This cheese pizza quesadilla is a fun twist on a classic meal! It’s filled with mushrooms, bell peppers, onions, mozzarella, and pizza sauce for a simple but satisfying dinner!


Units Scale
  • 1 teaspoon olive oil
  • 1 green bell pepper, chopped
  • 4oz baby bella mushrooms, sliced
  • 2 tablespoons diced red onion
  • 2 garlic cloves, minced
  • 1 cup baby spinach
  • 1/4 cup pizza sauce
  • 4oz shredded mozzarella
  • 2 large tortillas


  1. Add the olive oil to a large non-stick skillet and heat over medium heat.
  2. Add the bell pepper, mushrooms, and onion, and cook for 3-4 minutes, stirring occasionally.
  3. Add the garlic and spinach and continue to cook for 2 minutes until the spinach is wilted.
  4. Remove the veggies from the pan.
  5. Add half of the veggie mixture onto one half of a tortilla.
  6. Top with half the pizza sauce and half the mozzarella then fold the tortilla in half.
  7. Repeat with the remaining tortilla and ingredients.

  8. Cook the quesadillas in the skillet over medium, heat for 3-4 minutes on each side until golden brown.
