This pesto white bean soup is made with just five ingredients, but it’s packed with flavor! It’s perfect for a satisfying plant-based meal!


Units Scale
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 (15oz) cans cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1/4 cup pesto
  • 2 large kale leaves, destemmed and torn into 1” pieces


  1. In a large pot, add the olive oil and heat over medium heat for 30 seconds.
  2. Add the onion and stir to coat in olive oil. Cover and cook over medium heat for 7-9 minutes, stirring occasionally, until the onion is softened.
  3. Add the broth and cannellini beans and bring to a boil.
  4. Reduce the heat to a simmer and stir in the pesto. Simmer for 10 minutes or until the beans are soft.

  5. Add the kale and cook for one minute until the kale is bright green.
  6. Remove from heat and enjoy.
