Oatmeal Blueberry Muffins

Description

These tender oatmeal blueberry muffins are soft and fluffy and studded with plenty of blueberries for a sweet flavor!


Ingredients

Scale
  • 1 cup rolled oats
  • 1 cup buttermilk
  • 1/3 cup softened butter
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 cups fresh blueberries

Instructions

  1. In a small bowl, combine the rolled oats and buttermilk. Soak the oats for 1 hour.
  2. Preheat the oven to 400 degrees and line a muffin pan with paper liners.
  3. In a large bowl, mix the butter, brown sugar, and egg with a hand mixer.
  4. In a separate bowl, combine the flour, baking soda, baking powder, and salt.
  5. Add the oat mixture to the egg mixture, then stir in the dry ingredients. Do not over mix.
  6. Gently fold in the blueberries until just combined.
  7. Divide into muffin tins and bake for 20-22 minutes.
