This healthy peach crisp is easy to make with fresh or frozen peaches. This delicious vegan treat is perfect for sharing.

For the Filling:
- 1lb fresh or frozen peaches, sliced
- 2 tablespoons maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch or arrowroot powder
For the Topping:
- 1 cup old-fashioned oats
- 1/2 cup almond flour
- 1/4 cup chopped pecans
- 2 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350 degrees.
- If the peaches are frozen, microwave on 50% power for 3 minutes to thaw slightly.
- In a large bowl, combine sliced peaches, maple syrup, lemon juice, vanilla extract, and cornstarch. Toss until the peaches are well coated. Transfer the peach mixture to an 8×8 baking dish.
- In a small bowl mix together the oats, almond flour, chopped nuts, melted coconut oil, maple syrup, cinnamon, and a pinch of salt. Stir until well combined.
- Sprinkle the oat mixture evenly over the peach filling in the baking dish.
- Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for another 10 minutes.
- Remove from the oven and let it cool for a few minutes before serving.
