Description

This healthy peach crisp is easy to make with fresh or frozen peaches. This delicious vegan treat is perfect for sharing.

For the Filling:

  • 1lb fresh or frozen peaches, sliced
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch or arrowroot powder

For the Topping:

  • 1 cup old-fashioned oats
  • 1/2 cup almond flour
  • 1/4 cup chopped pecans
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons maple syrup
  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350 degrees.
  2. If the peaches are frozen, microwave on 50% power for 3 minutes to thaw slightly.
  3. In a large bowl, combine sliced peaches, maple syrup, lemon juice, vanilla extract, and cornstarch. Toss until the peaches are well coated. Transfer the peach mixture to an 8×8 baking dish.
  4. In a small bowl mix together the oats, almond flour, chopped nuts, melted coconut oil, maple syrup, cinnamon, and a pinch of salt. Stir until well combined.
  5. Sprinkle the oat mixture evenly over the peach filling in the baking dish.
  6. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for another 10 minutes.
  7. Remove from the oven and let it cool for a few minutes before serving.
