Description

This Greek cucumber and tomato salad is a great way to turn a few basic vegetables into a delicious and easy side dish. I love making this recipe when I want a salad but I don’t have any lettuce in the fridge!


Ingredients

Units Scale
  • 2 large cucumbers, sliced lengthwise, then into half moons
  • 1 pint cherry tomatoes
  • 1/4 small red onion, thinly sliced
  • 3 oz feta cheese, crumbled
  • 3 tbsp olive oil
  • 1/4 teaspoon dried oregano
  • Dash of Salt & Pepper

Instructions

  1. Combine the cucumber, tomato, and red onion in a large bowl.
  2. Sprinkle with feta and drizzle with olive oil. Top with oregano, salt, and pepper.
  3. Mix gently until completely combined. Add additional salt to taste.
  4. Keep refrigerated until ready to serve.
