- 1 cup cottage cheese (I recommend Good Culture 4% or 2%)
- 1/2 cup pesto
- 1/4 cup spinach (optional)
Instructions
- Add the cottage cheese, pesto, and spinach to a blender and blend until smooth.
- Serve with your favorite pasta.
Notes
The brand of cottage cheese matters a lot. Some storebought brands are overly sour and can give the pasta a sour taste. I recommend Good Culture because it’s well-balanced with a creamy, subtle flavor.
This is enough sauce to pair with 8oz of pasta.
