Description

This cottage cheese alfredo sauce is rich and creamy but secretly healthy! It’s packed with protein and surprisingly easy to make.


Ingredients

Units Scale
  • 1/2 cup milk (I used skim)
  • 2 teaspoons cornstarch
  • 1 cup cottage cheese (I used 4% milk fat for extra creaminess)
  • 2oz cream cheese (low fat or regular)
  • 2oz grated Parmesan cheese (about 1/2 cup)
  • 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1 teaspoon Italian seasoning
  • Salt to taste (if needed)

Instructions

  1. Whisk together the skim milk and cornstarch until the cornstarch is dissolved.
  2. Add the milk mixture, cottage cheese, cream cheese, Parmesan cheese, garlic powder, lemon juice, and Italian seasoning to a blender.
  3. Blend until smooth.
  4. Transfer to a saucepan and cook over low heat for 3-4 minutes until thickened.
  5. Combine it with your favorite cooked pasta. (This makes enough sauce for 4-6oz of pasta.)
