Description
This cottage cheese alfredo sauce is rich and creamy but secretly healthy! It’s packed with protein and surprisingly easy to make.
Ingredients

Scale
- 1/2 cup milk (I used skim)
- 2 teaspoons cornstarch
- 1 cup cottage cheese (I used 4% milk fat for extra creaminess)
- 2oz cream cheese (low fat or regular)
- 2oz grated Parmesan cheese (about 1/2 cup)
- 1 teaspoon garlic powder
- 1 tablespoon lemon juice
- 1 teaspoon Italian seasoning
- Salt to taste (if needed)
Instructions
- Whisk together the skim milk and cornstarch until the cornstarch is dissolved.
- Add the milk mixture, cottage cheese, cream cheese, Parmesan cheese, garlic powder, lemon juice, and Italian seasoning to a blender.
- Blend until smooth.
- Transfer to a saucepan and cook over low heat for 3-4 minutes until thickened.
- Combine it with your favorite cooked pasta. (This makes enough sauce for 4-6oz of pasta.)
