Description

This chocolate baked oatmeal is a healthy breakfast that tastes like dessert! It’s easy to make and packed with 14g of protein per serving!


Ingredients

  • 2 large eggs
  • 1 cup soy milk
  • 1 teaspoon vanilla extract
  • 1/3 cup maple syrup
  • 2 cups old-fashioned oats
  • 1/3 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup creamy peanut butter, melted
  • Optional toppings: chocolate chips, additional peanut butter, etc.

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray an 8×8 baking dish with non-stick spray.
  3. In the baking dish, whisk together the eggs, soy milk, vanilla, and maple syrup until combined.
  4. Stir in the oats, cocoa powder, baking powder, salt, and peanut butter.
  5. Bake for 25-30 minutes or until set. Drizzle additional peanut butter or sprinkle chocolate chips on top.
  6. Allow it cool slightly, then slice and enjoy!
