- 1 15oz can black beans, drained and rinsed
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 2 chipotle peppers in adobo sauce (or 2 tablespoons adobo sauce)
- 2 tablespoons cream cheese
- 1 teaspoon lime juice
- 1/3 cup shredded Pepper Jack cheese
Instructions
- Preheat the oven to 350 degrees.
- In a food processor, add the black beans, garlic, cumin, chipotle peppers, cream cheese, and lime juice.
- Pulse 10-15 times or until incorporated but still chunky.
- Transfer the bean mixture to a small oven-safe baking dish.
- Top with shredded cheese.
- Bake for 12-15 minutes until cheese is melted.
- Serve immediately.
