- 1 head cauliflower, chopped into 1” florets
- 1 large tomato, finely diced
- 1/4 cup chopped mint
- 1/2 cup chopped parsley
- 2 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Add the cauliflower to a food processor and pulse until very fine, about the size of a grain of rice.
- Toss the cauliflower with the tomato, mint, parsley, lemon juice, and olive oil, then season with salt and black pepper.
