Description

This tasty buckwheat banana bread is simple to make with just 10 basic ingredients. It’s naturally vegan and gluten-free, perfect for a healthy snack or breakfast on the go!


Ingredients

  • 1 1/4 cups (325g) mashed banana (from three very ripe bananas)
  • 1/3 cup melted coconut oil or vegetable oil
  • 1 cup light brown sugar, packed
  • 1/2 cup almond milk
  • 1 teaspoon vanilla extract
  • 2 cups buckwheat flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or 1/2 cup dark chocolate chips (vegan)

Instructions

  1. Preheat oven to 350 degrees. Grease and line a 5” x 9” loaf pan with parchment paper or spray with non-stick spray.
  2. In a large bowl, combine mashed banana, oil, and brown sugar. Whisk until smooth. Some lumps of banana may remain.
  3. Add the almond milk and vanilla, then whisk to combine.
  4. Add the flour, baking powder, and salt. Stir until smooth and no lumps remain.
  5. Allow to sit for 5 minutes for the flour to absorb the liquid, otherwise the loaf will be very gritty.
  6. Fold in the chopped walnuts and chocolate chips.
  7. Scrape into the prepared pan.
  8. Bake for 55-65 minutes until a skewer inserted comes out clean.
  9. Allow to cool in the pan for 10 minutes before moving to a cooling rack.
