Vegetarian Taco Pasta

This one-pan vegetarian taco pasta has all your favorite taco flavors in one dish! Spicy salsa, black beans, corn, and avocado turn your pasta night into a fiesta of flavors!

Add elbow pasta, salsa, broth, black beans, corn, and taco seasoning to a large pot. Bring to a boil then simmer for 8-9 minutes or until the pasta has absorbed the liquid.

Remove from heat and stir in the cream cheese. Sprinkle with cheddar cheese.

Top with avocado and additional salsa before serving.
