The Best Vegetarian Burrito

This tasty vegetarian burrito is loaded with cilantro lime rice, seasoned black beans, roasted corn, and drizzled with a deliciously  spicy burrito sauce for a complete meal packed with flavor!

You'll need: white or brown rice, butter, lime, cilantro, olive oil, corn, black beans, oregano, chili powder, cumin, mayonnaise, sour cream or Greek yogurt, chipotle peppers in adobo sauce, large burrito tortillas, shredded cheddar cheese, and optional toppings.

Cook rice according to package directions, then mix the cooked rice with butter, lime juice, and chopped cilantro.

Preheat oven to 450 degrees. Roast corn for 5-6 minutes until it begins to brown.

Combine black beans, cumin, chili powder, and oregano in a microwave safe bowl. Microwave for 1-2 minutes until heated. (Alternatively, you can sautè the beans in a skillet for 4-5 minutes.)

Blend mayonnaise, sour cream, chipotle peppers in adobo sauce, and juice from half a lime until blended.

Warm tortillas in the microwave with a damp paper towel.

Divide rice, corn, and beans between the four tortillas. Top each with shredded cheese. Drizzle with burrito sauce. Roll the tortilla tightly.
