Vegan Kale Crunch Salad

This simple kale crunch salad is made with leafy kale, crunchy  cabbage, sliced almonds, and a simple homemade vinaigrette. This simple  side dish only takes a few minutes to make!

You'll need: curly kale, green cabbage, almonds, apple cider vinegar, Dijon mustard, maple syrup, olive oil, salt, and black pepper.

Remove the stems from the kale leaves and tear the leaves into bite-sized pieces. Place kale in a large mixing bowl and toss with shredded cabbage and almonds.

In a small bowl, whisk together olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt and pepper.

Pour dressing over salad and toss everything together until greens are well coated. Serve immediately or refrigerate until ready to serve.
