This hearty slow cooker lentil soup is filled with vegetables and packed with plant-based protein. This cozy soup is healthy comfort food at its finest and it’s so simple to make!

You'll need: yellow onion, carrots, celery, garlic,  cumin, dried thyme, bay leaf, vegetable broth, brown lentils, russet potato, and lemon juice.

Add all the ingredients except the lemon juice to a slow cooker and stir to combine. Cover and cook on low for 6-8 hours or high for 3-4 hours.

Stir in the lemon juice and enjoy.
