Breakfast Rice Bowl

This Breakfast Rice Bowl is made with Jasmine rice and a variety of leftover vegetables for a delicious stir fry that is perfect for a morning meal or weekend brunch!

You'll need: rice, eggs, vegetables, and soy sauce

Add the eggs to a large nonstick skillet and cook, stirring frequently, until scrambled.

Add mushrooms and the white parts of the scallion and cook for 4 minutes. Drain any moisture and then transfer to a plate.

Add the cooled rice into the skillet and spread it into an even layer. Continue to cook, stirring frequently.

Add the spinach, cooked eggs, mushrooms, scallions, and soy sauce.

Continue to cook until spinach is wilted and rice is warmed.

Transfer to a bowl and top with green parts of the scallion, Top with a fried egg, if desired.
