These vegan peanut butter blondies are rich and fudgy, with a deliciously sweet flavor. These healthy blondies are made with oat flour so they’re plant-based and gluten-free, but they taste just as delicious as a traditional blondie.

- 2 tablespoons chia seeds
- 3 tablespoons water
- 1 1/4 cups (150g) oat flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup dark brown sugar
- 3/4 cup creamy peanut butter
- 1/4 cup coconut oil, melted
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1/2 cup vegan chocolate chips
Instructions
- Preheat oven to 350 degrees. Line an 8” x 8” pan with parchment paper and set aside.
- In a small bowl, combine the chia seeds and water. Set aside for 5 minutes to let it thicken.
- In a large bowl combine brown sugar, peanut butter, coconut oil, and vanilla.
- Add the almond milk and chia seed mixture and continue to stir until completely combined.
- Stir in the oat flour, baking powder, and salt until well combined.
- Fold in the chocolate chips if using.
- Pour into prepared baking pan and flatten into the corners.
- Bake for 25-30 minutes until lightly browned around the edges and firm in the center. Bake longer for a more cake-like blondie and less time for something more fudge-like.
- Allow to cool completely before removing from pan and cutting into squares.
