- 1 cup raw cashews, soaked in boiling water for 15 minutes
- 1/2 cup water, plus extra as needed
- 3 tablespoons lemon juice
- 1 1/4 teaspoons salt
- 1 teaspoon onion powder
- 1/2 teaspoon maple syrup
- 1/4 teaspoon garlic powder
- 1/4 cup fresh parsley
Instructions
- Soak the cashews in boiling water for 15 minutes. Drain and set aside.
- Add the soaked cashews, ½ cup water, lemon juice, salt, onion powder, maple syrup, garlic powder, and parsley to a blender.
- Blend on low speed until the ingredients are combined, about one minute.
- Scrape down the sides of the blender.
- Blend on high speed until the dressing is smooth and creamy, about 1-2 minutes.
- If the dressing is too thick, add additional water one tablespoon at a time until the desired consistency is reached.
