For the salad
- 4 cups romaine lettuce
- 1 orange bell pepper, diced
- 4 pepperoncinis, sliced
- 1 15oz can chickpeas, drained and rinsed
- 1/2 cup cherry tomatoes, diced
- 1/2 English cucumber, diced
- 1/2 small red onion, diced
For the dressing
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- Salt to taste
Instructions
- In a large bowl, combine the lettuce, vegetables, and chickpeas and toss until mixed.
- In a small bowl or jar, whisk together the oil, vinegar, mustard, and seasonings.
- Drizzle the dressing over the salad. Add additional salt to taste, if needed.
