Description

This cozy tortellini cooks in a broth made with garlic, Parmesan rinds, and vegetable stock for a light, flavorful soup that’s comforting, simple, and perfect for chilly nights.


Ingredients

  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes
  • 4 cloves garlic, minced
  • 6 cups vegetable broth
  • 2 Parmesan cheese rinds (about 1″x3″x1/4″ each)
  • 1 lb tortellini
  • Salt to taste, if needed

Instructions

  1. In a large pot, heat olive oil over medium heat. Add red pepper flakes and garlic. Sauté for one minute until fragrant.
  2. Add the vegetable broth and Parmesan rinds. Bring to a boil, then reduce to a simmer.
  3. Simmer uncovered for 15 minutes.
  4. Bring broth back to a gentle boil. Add tortellini and cook according to package directions (usually 2-3 minutes) until tender. Discard Parmesan rinds, and add additional salt to taste, only if needed.
