Description
These roasted carrots are caramelized in the oven with butter and spices for a flavorful side dish. They’re crispy on the edges, tender inside, and so easy to make!

- 2 lbs carrots, peeled, cut crosswise and lengthwise into evenly sized pieces
- 2 tablespoons butter, melted
- 1 teaspoon za’atar seasoning
- Salt to taste
- Cilantro for garnish
Instructions
- Adjust oven rack to middle position and preheat oven to 425 degrees.
- In a large bowl, combine carrots with butter, za’atar seasoning, and a pinch of salt. Toss to coat.
- Transfer the carrots to a parchment-lined rimmed baking sheet and spread in single layer.
- Cover the baking sheet tightly with foil and cook for 15 minutes.
- Remove foil and continue to cook, stirring twice, until carrots are well browned and tender, 30 to 35 minutes. Season with additional salt to taste, if needed.
