Description

These roasted carrots are caramelized in the oven with butter and spices for a flavorful side dish. They’re crispy on the edges, tender inside, and so easy to make!


Ingredients

  • 2 lbs carrots, peeled, cut crosswise and lengthwise into evenly sized pieces
  • 2 tablespoons butter, melted
  • 1 teaspoon za’atar seasoning
  • Salt to taste
  • Cilantro for garnish

Instructions

  1. Adjust oven rack to middle position and preheat oven to 425 degrees.
  2. In a large bowl, combine carrots with butter, za’atar seasoning, and a pinch of salt. Toss to coat.
  3. Transfer the carrots to a parchment-lined rimmed baking sheet and spread in single layer.
  4. Cover the baking sheet tightly with foil and cook for 15 minutes.
  5. Remove foil and continue to cook, stirring twice, until carrots are well browned and tender, 30 to 35 minutes. Season with additional salt to taste, if needed.
