Description

This tasty vegan tacos are filled with spiced lentils and sweet potatoes for an easy, healthy meal that is perfect for taco night! You can customize these tacos with your favorite toppings, so they’re great for the whole family!


Ingredients

  • 2/3 cup brown or green lentils
  • 2 cups vegetable broth
  • 2 tablespoons olive oil (divided)
  • 1 large sweet potato, peeled and cut into 1/2” cubes
  • 1 small jalapeño, minced
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • Juice of one lime
  • 8 corn or small flour tortillas
  • Toppings, avocado, cilantro sauce, etc.

Instructions

  1. In a medium pot, bring the vegetable broth to a boil over medium heat. Add the lentils, cover, and cook until most of the liquid is absorbed and the lentils are just tender but not falling apart – about 20-25 minutes.
  2. While the lentils cook, heat one tablespoon of olive oil in a large skillet over medium heat. Add the sweet potatoes and cook for 10–12 minutes, stirring occasionally, until fork-tender.

  3. Add the remaining tablespoon of olive oil, jalapeño, and garlic to the skillet. Stir in the smoked paprika, oregano, cumin, and salt. Cook for 3-4 minutes until fragrant. Add the cooked lentils and stir to combine.

  4. Remove from heat and squeeze lime juice over the top. Divide into tortillas and add any additional toppings you like.
