Description

This snow pea salad is made with crunchy celery, peppery arugula, roasted marcona almonds, salty Pecorino Romano cheese, purple cabbage, and lots of tender snow peas. It’s a tasty salad recipe with lots of textures and flavors!


Ingredients

Scale
  • 3 cups arugula
  • 2 cups snow peas, thinly sliced
  • 2 stalks celery, thinly sliced
  • 1/3 cup marcona almonds
  • 1/2 cup shredded purple cabbage
  • 1 oz Pecorino Romano cheese, shredded
  • 1 tablespoon olive oil
  • 2 tablespoons champagne vinegar
  • 1 tablespoon honey
  • 1 teaspoon dijon mustard
  • Salt to taste

Instructions

  1. In a large bowl, add the arugula.
  2. Top with snow peas, celery, almonds, cabbage and cheese.
  3. In a small bowl, whisk together the olive oil, champagne vinegar, honey, mustard, and salt.
  4. Drizzle 2 tablespoons of dressing over the salad and toss until combined. Add more dressing if needed.
