Description

This slow cooker wild rice soup is hearty and delicious! Add everything to the slow cooker and press start. It’s that simple!


Ingredients

  • 1 cup uncooked wild rice, rinsed
  • 2 tablespoons butter
  • 1 medium yellow onion, diced
  • 2 stalks celery, chopped
  • 2 large carrots, chopped
  • 4 cloves garlic, minced
  • 3/4 teaspoon dried thyme
  • 4 cups vegetable broth
  • 1/2 cup heavy cream or 1 cup evaporated milk
  • Salt and black pepper to taste

Instructions

  1. Add the wild rice, butter, onion, celery, carrots, garlic, and thyme to the slow cooker. Pour the broth over the top and stir.
  2. Cover and cook on high for 3 to 3½ hours, until the rice is tender and most of the grains have split open.
  3. Turn the slow cooker off completely. Don’t leave it on warm, or the rice will get soggy.
  4. Stir in the cream or evaporated milk.
  5. Taste, then add salt and pepper, if needed.
  6. If the soup thickens as it sits, stir in ½ cup of water at a time until it reaches the consistency you want.
